Cure all Chicken Soup
Many cultures each have their version of a homemade chicken soup, So quick and easy to prepare this version is adapted from Indira Naidoo, don't be surprised at the amount of ginger in this recipe, I often recommend this to clients who are warding off a cold, the warmth in this broth makes it both medicinal, nourishing and so delicious.
2 organic skinless chicken breast fillets (cubed)
2 large potatoes (cubed)
2 carrots (cubed)
1.5 litre chicken stock
5 cm fresh ginger (finely diced)
4 cloves garlic ( finely diced)
2 cm fresh tumeric or 1 tsp dried tumeric powder
1 chilli ( finely chopped) or 1/2 tsp dried chilli flakes
1 bay leaf
4 sprigs of thyme
2 leeks (optional) sliced
Salt and freshly ground pepper
Olive oil
- Sauté over medium heat the olive oil, garlic, ginger, fresh turmeric, fresh chilli ( if using dried tumeric powder and chilli flakes add this later), thyme, bay leaf for 2 mins.
- Add carrots (and leeks) sauté 3 mins
- Turn heat to low and add turmeric powder andn chilli flakes and sauté 1 minute until aromatic, avoid burning the dried herbs
- Add chicken stock and water and bring to boil, then add potatoes and simmer till nearly tender.
- Add chicken pieces and simmer 2-3 mins till just cooked
- Seasonal with salt and pepper to taste
